@meandshilohlee: The larger the ratio, the bigger the meal. The smaller, it’s more of a snack. And remember. The colder environment the longer it will take to eat the food(flour and water/ratio), the warmer the faster! I just fed 10g starter 50g water and 60g bread flour, that will give me 120g of peaked starter tomorrow morning. Its probably 73/74 in my kitchen right now(plus some humidity). Omg I’m glad I saw this! I’m in Southern California and have been doing fine with feeding 2:2 but lately it rises and drops so quickly I can’t keep up. Thank you for the reminder!
