Fry (hi heat in wok) ginger slices, shallots, garlic, preserved red bean curd. Splash of Shaosing wine. Add trotters (frozen, pre-split, from Chinese supmkt). Add water (chicken stock is much better). Low simmer until a chopstick can poke through easily (or pressure cook, faster). Thicken with corn starch slake. Chopped spring onions to serve)
