I don't remember where I learned it, but I use a standard pour over grind (on the coarser side of it) with a 15s pour + 15s rest, repeating until all the water is gone. Simple and really good.

I am already doing this. Extraction is science and experience. As a brewmaster in beer. Extraction time temperature, grain size are all elements that if adjusted correctly can have vastly different results
