if I can turn a dish into a one-pot meal…that’s exactly what I’ll be doing 🫡 🌮 this enchilada skillet only takes 30 minutes to make & is the perfect meal to prep for the week!! ONE-POT ENCHILADA SKILLET - 1 lb lean ground beef - 1/2 a yellow onion, chopped - 1 red bell pepper, finely chopped - 1 green bell pepper, finely chopped - 1/2-3/4 packet taco seasoning (I like @Simply Organic Foods or @Siete Foods ) - 1 15 ox jar red enchilada sauce (I use Siete) - ~1 cup fire roasted corn (I eyeball this) - 8 corn tortillas, cut into quarters or strips (I use Siete) - Mexican cheese blend - For topping: avocado, sour cream, green onions, etc Preheat oven to 400. In a deep skillet or pot, add onions and bell peppers and cook on medium heat for ~3 minutes or until slightly softened. Push to the outer edges of the pot and add ground beef. Once beef is done, combine with onions & peppers. Add taco seasoning, enchilada sauce, and fire roasted corn. Stir until well combined and add in a handful of Mexican cheese. Then fold in tortilla strips until evenly coated and distributed. Place pot in the oven for ~15 minutes, or until the cheese on top is slightly browned & bubbly. Remove from oven and serve or add to meal prep containers. Add desired toppings before eating & enjoy! #mealprep #easymealprep #onepotmeals #onepotrecipe #healthymealprep
