Indo-European Europeans didn’t generally “become blond” until the Bronze Age, and that just happened in North and Western Europe. The reason why heroes are depicted as blond is that people tend to write heroes as good-looking. Even non-fictional heroes’ appearances are changed by storytellers to make them more handsome.

Thats actually not true, Greek populations did not originate from Indo-Europeans, that's a very outdated theory which was disproved by genetic science. Indo-European DNA appeared in Greek dna long after it was formed indigenously in the mainland Greece and the Aegean region (Aegean islands and western coasts of Anatolia). Ancient Greeks derived around 80-90% directly from these native neolithic people, while Indo European DNA was much later additional, on average 10% and often it was entirely absent, as we see by the tomb of the legendary Griffin Warrior of Pylos, a royal Mycenean warlord that was expected to have atleast 5% Indo European DNA, but he had 0%.
