I making 3 gallons right now. I start eating it after one week. The longer it ferments the stronger it is. Store bought kraut doesn’t compare to homemade.

I love this stuff. I grew up eating it cooked with hot dogs cut up in it, served with mashed potatoes, but I have found that there are so many other ways to have it. I have read several excellent suggestions in the comments. 😋

Sauerkraut is lovely if it's fixed right. I drain it, repl.,ace the brine with white wine and add apple slices and caraway seed. Or Polish style, juice an all, and add a cup of brown sugar and caraway. I like to cook fresh sausage like kielbasa with it.
