Just to clarify, both translations are fine, one is just objectively closer to the original Greek.

in Syriac Aramaic it's "ܗܒ ܠܢ ܠܚܡܐ ܕܣܘܢܩܢܢ ܝܘܡܢܐ" (word for word: give to-us bread of-necessity/ will-our today)

Chances are, epioúsios doesn’t come from epì and ousía, but from epioûsa “the following (day)”, itself a participle of the verb épeimi “to follow”, from epì and eîmi “to come” (not the same as eimí “to be”—notice the diacritics). The main argument lies with the iota. If the word came from epì and ousía, it would be epoúsios, as the iota of epì would be dropped before omicron. On the contrary, if it comes from epioûsa, it makes sense for the iota to be there, because the feminine participle of eîmi is ioûsa, so epì and ioûsa do give epioûsa.
