Hi, biologist here: fermentation and rot ARE fundamentally the same process of having bacteria or yeast break down decomposing material! We consider “rot” to be when this decomposition turns into toxic compounds, but you could absolutely interchangeably use rot vs fermentation depending on the context you’re using it in. People in the comments really want to pretend like all words have rigid meanings and aren’t influenced by context or social use 🙃 Fermentation IS a type of rot, by definition, AND not all fermentation is “controlled”, AND, not all rot is favorable. More than one thing can be true at one time.

I really don't like this romanticization of ancient ways of living. It should be noted that for the duration of time that much of this was practiced, the average life expectancy of a human was 30. We didn't even cross the average of 40 until the late 1800s.
