Ingredients: - 2 salmon fillets (6 oz each) - 1 cup quinoa - 1 bunch asparagus (about 1 lb) - 2 tablespoons olive oil - 1 lemon (for juice and zest) - 2 garlic cloves, minced - 1 teaspoon dried thyme - 1 teaspoon dried rosemary - Salt and black pepper to taste Instructions: 1. Preheat oven to 400°F (200°C). 2. Wash and trim the asparagus. Toss with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes until tender. 3.
