@fooodieverse: Mango sticky rice 🥭🇹🇭 INGREDIENTS - 1 cup cooked rice (preferably sticky rice, but we used short grain rice because it’s all we had 🥲) - 2 champagne mangos, peeled and sliced - 1 cup coconut milk - 1/4 cup sugar - Pinch of salt - 2 tsp cornstarch - Sesame seeds for garnish INSTRUCTIONS 1. Cook rice according to package instructions. 2. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar has dissolved. Do not let it boil. 3. Pour half of the coconut sauce over the cooked rice and gently fold to combine. Cover and let sit for at least 5 minutes to allow the rice to absorb the coconut milk. 4. Add the cornstarch directly to the remaining coconut sauce and whisk well until smooth. Cook over medium heat, stirring constantly, until slightly thickened, about 1–2 minutes. Remove from heat and let cool slightly. 5. To serve, place the coconut rice on a plate and arrange the sliced mango alongside it. 6. I just made it but I’m impatient, don’t have corn starch, and don’t know how to cook rice (it’s the only thing I’m unable to get right😔) so it’s lowk sweet, mushy, hot stew but it was good
