@_nitisheth_: WOW I did it! It feels like an accomplishment! Making ghee the authentic Ayurvedic way - just like our ancestors did. And it was a PROCESS! There are two ways to make ghee: - one is from milk set into yoghurt, churned into butter and then melted into ghee. - the second involves cream set into yoghurt, churned into butter and then melted into ghee. I tried option one .. and it was long! First thing is we need good quality milk - and after a little bit of research I learnt that in the UK Jersey cows naturally produce milk that has a higher content of the A2 protein - this is similar to the milk from Gir cows in India. I ordered some milk, cream and yoghurt from @oldhallfarm - then boiled the milk and set it into yoghurt overnight. The next morning I then set about churning the yoghurt. IT TOOK SO LONG! I think this was because I had a large amount of milk for the capacity of hand blenders that I had. I used my electric whisk, hand blender, Vitamix and my Kenwood stand mixer - all of it! After a LONG time, I could finally see the butter separating from the buttermilk. Once I collected as much butter as I could - I then melted it into ghee - and got a whopping 108 grams! In hindsight - I'd probably start with a smaller quantity of milk, and possibly even chill the yoghurt for a few hours before churning it into butter. This is exactly how I do it. I make yoghurt each week with unhomogenised Jersey milk, skim off the cream, save it in the freezer, and then churn it to butter and then ghee. I get roughly 250ml ghee after a month of yoghurt making a malai saving 😅

You make more ghee if you use cream and culture that. Then make butter from it. Not sure about where to source A2 cream though
