It’s Crocktober! I’m sharing a crockpot recipe every day in October 🥳 Be sure to follow along so you don’t miss any! Day 5/31- This Crock Pot Marry Me Mearballs is a guaranteed dinner winner! 1(32-oz) bag frozen Italian-style meatballs 2 cups chicken broth ⅓ cup sun-dried tomatoes, chopped +1-2 tbsp of the oil trom the Jar 4 cloves garlic, minced 2 tsp Italian seasoning 1 tsp onion powder ½ tsp paprika ½ tsp salt ½ tsp black pepper ½ tsp crushed red pepper flakes ½ cup grated Parmesan cheese 3 tbsp cornstarch 1 cup heavy whipping cream 3 cups (mbaby spinach (this sounds like a lot, but it will cook down) Spaghetti or pasta Fresh basil leaves, for garnish Lightly spray the slow cooker with nonstick cooking spray or oil. Place the meatballs in the slow cooker. In a medium bowl, whisk together the chicken broth, sun-dried tomatoes plus oil, garlic, Italian seasoning, onion powder, paprika, salt, pepper, red pepper flakes, and Parmesan cheese. Pour the mixture into the slow cooker. In a measuring cup, whisk in the cornstarch with the heavy cream until smooth, then pour into the slow cooker. Stir. Cover and cook for 4 hours on low or 2 hours on high. Stir the meatballs halfway through cooking. I found the magic cooking formula is to cook the meatballs on low for 2 hours, give them a good stir, and then increase the heat to high and cook for 1 more hour before adding the spinach to wilt. Perfect! Turn off the slow cooker. Give the meatballs a good stir. Add the spinach and replace the cover to wilt the spinach. At this time, bring a pot of water to boil and cook the spaghetti according to package directions. Spoon the meatballs and sauce over the spaghetti and garnish with fresh basil. Time to dig in! #crockpotrecipes #SlowCookerRecipes #crocktober
