S’mores Brownie Skillet 🍫🔥 (recipe makes a 10” skillet) Ingredients: 10 tbsp (140g) unsalted butter, melted 1 tbsp (13g) vegetable oil 1 cup (200g) granulated sugar ¼ cup (50g) brown sugar, packed 2 eggs + 1 egg yolk, room temp 1 tsp vanilla extract ⅔ cup (60g) unsweetened cocoa powder ½ tsp salt 1 tbsp cornstarch ⅔ cup (80g) all-purpose flour, spooned & leveled or weighed (don’t pack it in) ¾ cup chocolate chips/chopped chocolate ~4 graham cracker sheets to place at the bottom Top: Mini Marshmallows Hersheys chocolate or chocolate chips Teddy grahams/graham cracker pieces Instructions: Preheat oven to 325°F and grease a 10-inch cast iron skillet (mine is enameled). In a large bowl, whisk melted butter, oil, granulated sugar, and brown sugar until smooth. Add eggs and vanilla, then whisk vigorously for 1-2 minutes. Stir in cocoa powder, cornstarch, and salt. Then, gently fold in the flour until just combined (don’t over mix). Fold in chocolate chips/chopped chocolate. Line the bottom of the prepared skillet with graham crackers (breaking some to fit your skillet). Spread batter evenly on top. Bake for 22-28 minutes until a toothpick inserted near the center comes out with a few moist crumbs (not wet batter). Cover the top with mini marshmallows and broil for ~1 minute or toast with a kitchen torch. *keep a very close eye if you broil, it’ll brown fast. Top with teddy grahams and chocolate pieces.
