This is one of those side dishes that quietly steals the whole show 🤤 Save this recipe for later 🧡 🛒 Ingridients (serves 3–4) For the asparagus 🌿 450 g asparagus 🫒 3 tbsp olive oil 🧂 1 tsp salt ⚫ 1/2 tsp black pepper 🧀 1 cup mozzarella, freshly grated 🌾 1/2 cup panko breadcrumbs 🌿 Fresh basil, sliced For the balsamic tomatoes 🍅 170 g cherry tomatoes 🫒 2 tbsp olive oil 🧂 1/2 tsp salt ⚫ 1/4 tsp black pepper 🧄 2 garlic cloves, crushed 🍇 2 tsp balsamic glaze 📝 Steps 1️⃣ Preheat the oven to 200°C 2️⃣ Trim the asparagus and place on a baking tray. Drizzle with olive oil and season with salt and pepper 3️⃣ In a separate baking dish, add the cherry tomatoes, olive oil, salt, pepper and garlic and mix well 4️⃣ Roast both the asparagus and tomatoes for 12–15 minutes 5️⃣ Remove the asparagus, sprinkle over the mozzarella and panko breadcrumbs and return to the oven until the cheese is melted and bubbling 6️⃣ Stir the balsamic vinegar through the roasted tomatoes 7️⃣ Top the asparagus with the balsamic tomatoes and finish with fresh basil #recipeoftheday #EasyRecipes #homecooking #asparagus #caprese
