Hawaiian chili pepper water 🌶️ I used to live in Hawaiʻi, and when I came back to visit, I brought home seeds for nioi, the Hawaiian chili pepper. Now I’m growing those peppers in my Chicago garden and using them to make one of the tastiest simple condiments. Chili pepper water is thin, spicy, salty, tangy, and garlicky. It’s not meant to overpower your food. It’s more of a bright little kick that you can splash over your meals. My version: • 4 cups water • 1 cup rice wine vinegar • 2 tbsp Hawaiian sea salt • 10–15 nioi (you can also use Thai chilis, habaneros, or whatever pepper you have on hand) • 6 cloves garlic Bring the water, vinegar, and salt to a boil until the salt dissolves. Add the peppers and garlic, boil for 10-15 minutes, then transfer to a clean, heat-safe container and let cool. A simple condiment with a lot of flavor!
