Old fashion separate taps are because we traditionally had gravity fed hot water from an immersion heater in the attic, then we have high pressure cold water. If you have both of these on a mixer tap the cold fires up the hot water pipe.

You put the cold water cupped in the hand first then add a little bit of warm with soap already on hands then push it all together like a mix. But the reason for this is that a lot of U.K. buildings are very old and it’s something to do with water tank, but more modern buildings don’t usually have these taps.

You need to use the hot one and when it gets to hot turn it off use the cold and wait for the hot to cool down the use the hot again really quite simple

It used to be that the hot water was not drinkable so had to be kept separate and then it became aesthetics.
