Ingredients • 400g button mushrooms, washed and dried well • 50g butter • 2 garlic cloves, finely chopped • Salt and black pepper • Small handful fresh parsley, chopped • Juice of 1/2 lemon • 2 large slices sourdough bread Whipped hot honey feta • 150g feta • 2 tbsp Greek yogurt • 1 tbsp of the browned butter from the pan • 1 1/2 tbsp honey • Pinch chilli flakes • Pinch salt • Black pepper 1. Make the hot honey feta Add the honey, chilli flakes and a tiny pinch of salt to a small pan and warm gently for 1 minute until loosened and glossy. Add the feta, yogurt, pepper and a spoon of the browned butter to a blender or food processor and blend until smooth and creamy. If it feels too thick, loosen with a splash of warm water or a little more yogurt. 2. Toast the sourdough Toast or fry the sourdough until golden and crisp. 3. Brown the mushrooms Heat the butter in a large frying pan over a medium-high heat until foaming and nutty smelling. Add the mushrooms and leave them alone for a few minutes so they actually brown rather than steam. Once golden and crisp around the edges, stir through the garlic, salt and pepper and cook for another minute. 4. Finish the mushrooms Turn off the heat and stir through the parsley and lemon juice. The lemon lifts the richness and makes the mushrooms taste more intense rather than acidic. 5. Assemble Spread the whipped feta generously over the toast, spoon over the mushrooms and all that brown butter from the pan, then finish with extra black pepper, parsley and another little drizzle of hot honey if you like. #MakeItAMushroomMoment #EnjoyItsFromEurope
