You don’t double pan it immediately. What you do is bake it first for about 7 minutes OR until the bottom part of the cookie begins to brown then that’s when you double pan and begin roasting the cookie at a lower temp. So this can go on for about 15 minutes or more depending on how much color you want on the cookie. But Kathleen prefers her cookies to be a bit brown so you get crisp edges but a chewy middle.

im p sure she doesn't bake from frozen. she freezes for convenience but lets them slack afterwards so it would be the same as a ball of dough cold from the fridge and not frozen.
