I'm addicted to sumac. I put it in everything: sauces, salads, vegetables, pasta, rice dishes... I miss it if it's not there. I can't tolerate a lot of cooked tomato so a teaspoon of sumac tricks my brain into thinking it's there. It's tart but not acidic.
