Soft & Cheesy Cottage Cheese Garlic Breadsticks Ingredients 1 cup cottage cheese 2 large eggs 1 cup shredded mozzarella cheese 1 cup almond flour 1 tsp baking powder 2 cloves garlic, minced 1 tsp dried oregano or Italian seasoning 1 pinch salt melted butter or olive oil for brushing (optional) chopped fresh parsley for garnish (optional) Instructions Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Blend cottage cheese and eggs in a blender or food processor until smooth and creamy. In a large bowl, mix the blended cottage cheese mixture with almond flour, baking powder, mozzarella, garlic, oregano, and salt until a thick dough forms. Spread the dough into a ½-inch thick rectangle on the prepared baking sheet. Bake for 15–18 minutes, or until edges are golden and the center is cooked through. Brush with melted butter or olive oil and sprinkle with parsley, if desired. Let cool slightly before slicing into breadsticks. note Let the dough rest briefly before baking to help the almond flour hydrate. For extra flavor, top with mozzarella before baking and brush with melted butter after. These freeze well and reheat perfectly at 350°F for 5–7 minutes.
