Soybeans 250g Water 1.2 litres Gdl 2.5g 1. Soak soybeans overnight 2. Blend with 1.2 litres of water 3. Strain through a cheese cloth 4. Boil to 85c and cook for at least 15 minutes 5. Add gdl into vessel, pour soymilk and let it set for 20 minutes Mapo base Minced meat 200g Szechuah pepper 15g Garlic 50g Spring onion (whites) 80g Yidu dried chilli 30g Doubanjiang 1 tablespoon Stock 600ml 1. Toast szechuan peppers and grind 2. Stir fry minced meat, add in garlic, spring onion, szechuan spice and fry till fragrant 3. Add in doubanjiang, cook down 4. Add in stock 5. If using fatty minced meat it should emulsify, thicken with cornstarch slurry if neccesary 6. Serve over silken tofu
