EASY MEALS FOR 2, EP. 1  Creamy Garlic Shrimp Scampi Pasta 🍝  Ingredients * 360g shrimp, peeled and deveined * 2 tbsp olive oil * 2 tbsp butter  * 38g garlic, finely chopped (about 8–10 cloves) * 140g dry spaghetti * ⅓ cup chicken stock (or chicken bouillon mixed with water) * ½ cup heavy cream * ½ cup reserved pasta water * 5g fresh parsley, chopped ( just rough chop some )  * Parmesan cheese, to taste * ¼ tsp salt * ¼ tsp black pepper * ½ tsp smoked paprika * squeeze of lemon juice  Instructions * Bring a pot of salted water to a boil and cook the spaghetti until al dente. Reserve ½ cup pasta water before draining. * Pat the shrimp dry and season with 1 tbsp olive oil and:  * ¼ tsp salt  * ¼ tsp black pepper  * ½ tsp smoked paprika * Heat a large skillet over medium-high heat. * Add the shrimp and sear for about 2 minutes per side, or until fully cooked and opaque. * Remove the shrimp from the pan and set aside. Make the sauce * Reduce heat to medium low, add 1 tbsp olive oil plus 2 tbsp butter. * Add the chopped garlic and sauté for 30–60 seconds or less if your pan is still hot for the shrimp ( don't burn the garlic !! ) , stirring frequently, until fragrant. * Pour in the chicken stock and scrape up any browned bits from the bottom of the pan. * Stir in the heavy cream and let the sauce simmer for 2–3 minutes until slightly thickened. * Add a handful of Parmesan cheese and stir until melted and smooth, then squeeze in some lemon juice. Finish the pasta * Add the cooked spaghetti to the sauce. * Pour in some of the reserved pasta water and toss until the sauce coats the pasta.
