It’s been a few years since we’ve grown ginger and with our mild/cool climate, it can be challenging. To be honest, I’ve been too lazy with having to tend to them indoors till the end of May 😅.  Do you break each portion that has sprouted with its own root system? This way the rhizomes can be put back in the potting soil  and wait for more shoots for planting individually to prevent overcrowding. Once each sprout has its own root system, it will be apple to absorb nutrients and water and photosynthesize.  The rhizomes were buried about ¾ to -1” below the potting soil mixed in with ¼ cup of worm castings. I misted the medium with water every other day to maintain moisture. The DIY humidity dome had three ½”  holes cut out for ventilation. The tray was placed in a room with temperatures 70-72 F. Tiny shoots started to emerge after three weeks. I procrastinated and potted them up after 6.5 weeks, but this is alright as they had more time to develop a stronger root system.  I planted each shoot in fertile and well-draining potting soil with the roots about an inch below the surface then watered in with a little bit of worm casting extract.  Being that ginger (Zingiber officinale) is a tropical plant, it will be kept indoors till outdoor night temperatures are above 50 F.
