A lamb tagine typically consists of tender pieces of lamb meat that are seasoned with a variety of spices & herbs, adding depth and complexity to the dish, , and other flavorful fruits, and nuts to create a rich and aromatic dish. # Recipe: Lamb Tagine ## Ingredients: - 2 kgs of Medium Lamb Pieces - 2 tsp of red Ras el Hanout - 1 tsp yellow Ras el Hanout - 1 tsp salt - 3 TBSP olive Oil - 1 cup of water - Half bunch of parsley - 1 large tomato - 3 Onions (Medium Size Onions) - Half Cup dried prunes - 1 TBSP Sugar - 1 Teaspoon Cinnamon Powder - 1/4 cup orange blossom water - Golden raisins - 1/4 cup blanched almonds ## Instructions: 1. Heat up the olive oil in a tagine or a large cooking pot. 2. Add the lamb pieces and sprinkle with red Ras el Hanout, yellow Ras el Hanout, and salt. Cook until the color of the meat changes. 3. Add 1 cup of water to the pot. 4. Place the onions on top of the meat. 5. Add chopped parsley and sliced tomatoes on top of the onions. 6. Cover the tagine or pot with a lid and cook until the meat is tender. 7. In a separate pan, combine the dried prunes, sugar, cinnamon powder, and orange blossom water. Cook until the mixture reduces to a thick sauce and the prunes caramelize. 8. Once the meat is tender, add golden raisins on top and the cooked prunes. Let it steam for another 10 minutes. 9. In a pan, heat a teaspoon of oil and roast the blanched almonds until slightly golden brown. 10. Serve the lamb tagine hot, garnished with whole or sliced almonds.
