Wanna a quick and delicious low carb dinner? Make these Low Carb Air-fried Beef Taquitos! This is not a classic taquito recipe, I make them in the air-fryer or oven, but it is something I have recently put together for my fiancé and we both loved it! It is super easy and doesn’t take too long to make.  Ingredients: - 10-11 low carb mini wraps or 5 low carb regular wraps - 500g ground beef - 1/2 chopped onion - 2 finely chopped garlic cloves - 3/4 cup chopped red bell pepper - 1/3 cup chopped green bell pepper - 80-100g grated cheddar  - 2 tbsp tomato paste - 2 tsp smoked paprika - 2 tsp ground cumin - 1 tsp salt - 1 tsp dried oregano - 1/2 tsp onion powder - 1/4 tsp black pepper - pinch of cayenne pepper - Pico de Gallo (optional) Sauce: - 1/2 avocado - 1/2 bunch of cilantro - 2-3 tbsp sour cream (substitute for Greek yogurt for a lower calorie option) - juice from 1/2 lime  - 1/2 small garlic clove (optional) - water - salt to taste 1. Heat olive oil in a skillet, add onion and fry until golden. Then add garlic and fry for 30 seconds until fragrant. Add ground beef, cook breaking it with a spatula until it is no longer pink. Mix in bell peppers, then tomato paste and spices. Cook for 1-2 min more and remove from the stove. Put the meat mixture in a bowl, mix in cheese. Let it cool down. 2. Warm mini wraps on a stove. Then spoon in about 50g of the meat and cheese mixture and roll it up. Repeat with the rest of the wraps. Put them in the air-fryer, spray with some olive oil and cook for about 10 min at 200C/400F.  3. In a food processor/blender blend the sauce ingredients. Add in water bit by bit until it reaches a desired consistency.  4. Serve your taquitos with the sauce and Pico de Gallo if desired.
