🐖✨ Roasted Pork — a Southern New Year’s tradition rooted in hope and progress. In the heart of the South, welcoming a new year often means gathering around a table where pork takes center stage. More than just a meal, pork symbolizes forward movement, prosperity, and good fortune — a belief tied to the way pigs root forward, never backward. It’s a reminder to leave the old behind and step confidently into what’s ahead. Slow-roasted until tender and rich with flavor, this dish is comfort, tradition, and intention all in one pot. Serving roasted pork on New Year’s Day isn’t just about eating well — it’s about honoring where we come from and setting the tone for a brighter year ahead 🥂🍽️ ⸻ 🧾 Southern Roasted Pork Ingredients 🛒 • 1 pork roast 🐖 • 2 onions, diced 🧅 • 1 bell pepper, diced 🫑 • 5 cloves garlic 🧄 • 4 tbsp oil 🫒 • 2 tbsp flour 🌾 • 1 quart chicken stock 🍲 • Boudreaux’s Lil’ Bit Better Creole Seasoning 🌶️ • Boudreaux’s Low & Slow Simmer Seasoning Directions 👨‍🍳 1️⃣ Trim pork roast and cut into several large pieces. Season generously on all sides with Creole and Low & Slow Simmer seasonings. 2️⃣ In a Dutch oven, heat a small amount of oil 🫒 over medium heat and brown pork pieces on all sides. Remove and set aside. 3️⃣ Add onions 🧅, bell pepper 🫑, and whole garlic cloves 🧄 to the pot. Cook until softened. 4️⃣ Add remaining oil and flour 🌾, stirring to form a light roux. Cook 5–8 minutes until lightly colored. 5️⃣ Slowly add a portion of the chicken stock 🍲, scraping up all the browned bits. Add remaining stock and season the liquid. 6️⃣ Return pork and any pan drippings to the pot. Cover and place in a 350°F oven. 7️⃣ Cook about 3 hours, stirring and repositioning the pork every hour to prevent sticking, until fork-tender. Serve hot with rice, greens, or cabbage — and let tradition lead the way into the new year 🐖✨ #pork #Recipe #newyear
