The only meats allowed in mac+cheese are: bacon/pancetta, fried chicken, bbq (brisket or pulled pork), lobster. Not ham! Also severely lacking in cheese sauce.

In Belgium we usually make a rich creme sauce with good quality cheese and my grandmother than made a crumble of grilled bread/butter/brown sugar/spring onions and spices to go on top and caramelize in the oven…absolutely delicious

The best way I can explain American style mac and cheese is as a baked version of carbonara (we give it a different name though to avoid controversy) made with a bechamel style cheese sauce instead of eggs. Make sure that you use bacon, pancetta, or guanciale instead of ham though to really drive that point home.

That looks delicious. I've made m&cheese with bacon in it, with ham in it, with lobster in it... so adding the ham like he did is totally cool. He's right, it's comfort food, so you adjust it to what you and yours like. that could be 7 cheeses and noodles, or it could be a more baked option.
