I think it is more about places spice grew in 1500-1700s colonial period than humidity, i live in northern France which has 90% humidity, spice less region of the world i would say in term of tastes 😂

Before the Columbian exchange Thailand (or the kingdoms that existed during that time) did not have super spicy peppers. They did have black pepper and its variants along with mustard but those are fall short of today’s spice levels, even if used in extreme.

Not all Thai people can eat spicy food. Good restaurants know how to balance flavors salty, sweet, spicy, and sour. It’s like we get addicted to that little pain in the mouth, and then the brain releases happy chemicals. After that, we just keep increasing the spiciness until it becomes a habit, because it’s so delicious we can’t stop eating 🔥

i wonder if a preference for spicy food correlates statistically at all with preferences for warm climate as well. also it definitely seems to make sense that people in colder climates would tend to avoid hot spice to avoid unnecessary sweating. cool!
