Before 1493 hot pepper was completely unknown outside of the Americas.

I assumed it had to do with food preservation and available herbs/spices pre-refrigeration

Excellent explanation. However, why does Canton, Hong Kong and Taiwan, despite being very humid, rarely uses lots of spice?

I think it is more about places spice grew in 1500-1700s colonial period than humidity, i live in northern France which has 90% humidity, spice less region of the world i would say in term of tastes 😂

Before the Columbian exchange Thailand (or the kingdoms that existed during that time) did not have super spicy peppers. They did have black pepper and its variants along with mustard but those are fall short of today’s spice levels, even if used in extreme.

I just ate some hot wings outside in Charlotte, North Carolina. It’s almost 100°. I sweated a lot. I do feel cooler.

Not all Thai people can eat spicy food.
Good restaurants know how to balance flavors salty, sweet, spicy, and sour.
It’s like we get addicted to that little pain in the mouth, and then the brain releases happy chemicals.
After that, we just keep increasing the spiciness until it becomes a habit, because it’s so delicious we can’t stop eating 🔥

I've also read that the process of suggesting digesting spicy foods tricks the body into thinking it's more full than it actually is, so it's a way to survive on less food.

since new world peppers are actually fruit that hold tons of vitamins, your body can actually be trained to associate spicy with nutritious

sweating in humid places doesn't help you cool of... you're already covered in water from outside humidity, it's not evaporating

i wonder if a preference for spicy food correlates statistically at all with preferences for warm climate as well. also it definitely seems to make sense that people in colder climates would tend to avoid hot spice to avoid unnecessary sweating. cool!
