@flora.grim: Loreen loves peas, so I made this peas with chicken meal and added a few extra veggies. I improvised a little with what I had, and it turned out so flavorful. This is one of those meals that never fails in our house, she always eats it so well! What you need for this recipe: • Chicken drumsticks • 2 cans peas, drained • 1 small onion, finely chopped • 1 green onion, chopped • 1 large carrot, chopped or sliced • 1/2 zucchini, chopped • 2 celery stalks, chopped • 2 potatoes, peeled and cubed • 1/2 cup tomato sauce • 2 tablespoons olive oil • Water or chicken broth, enough to almost cover the chicken • Salt, to taste • Sweet paprika • Black pepper, optional • Thyme or bay leaf, optional • Fresh parsley or dill, at the end Instructions: In a pot, heat the olive oil over medium heat. Add the onion, green onion, carrot, celery, and zucchini, and sauté for a few minutes until the vegetables start to soften. Add the chicken drumsticks and cook for a few minutes on each side. Season with salt, sweet paprika, a little black pepper, and a bay leaf. Pour in the tomato sauce, then add enough water or chicken broth to almost cover the chicken. Cover partially and let it simmer on low to medium heat for about 30–35 minutes. During the last 15 minutes of cooking the chicken, add the cubed potatoes. At the end, add the drained canned peas and mix gently. Let everything simmer for another 5–10 minutes, just enough for the peas to warm through and absorb the flavor. Since canned peas are already cooked, they don’t need to boil for long. Taste the sauce and adjust with more salt if needed. If the sauce is too watery, let it simmer uncovered for a few more minutes. Finish with fresh parsley. Enjoy! #mom #momlife #toddler #sahm
