Cook the seafood: In a pan over medium heat, add olive oil and sauté the shrimp (and squid if using) until slightly cooked. Add 1 tbsp of butter, ½ tsp paprika powder, and season with salt and pepper. Once fully cooked, remove and set aside. 	2.	Boil the pasta: Cook your pasta in boiling water with 1 tsp of salt. Slightly undercook it (1–2 minutes less than the package directions), as it will finish cooking in the sauce. Reserve about ⅓ cup of the pasta water before draining. 	3.	Make the sauce: In the same pan, add 1 tbsp of butter and 2/3 tbsp Laoganma. Sauté the chopped onion, garlic, and mushrooms (if using) over medium heat until the onion is soft and fragrant. 	4.	Combine everything: Add the tomato sauce, Parmesan cheese, sugar, oyster sauce, and black pepper. Pour in the reserved pasta water and stir well. Add the slightly undercooked pasta and let it simmer for 1–2 minutes until the sauce thickens and coats the noodles. 	5.	Finish the dish: Place cheddar cheese slices on top and let them melt.
