STEWS OF THE CARIBBEAN 🌍  welcome to Caribbean stews, my new series where i’ll be exploring the world of Caribbean stews. todays episode were taking a trip to Jamaica to make a classic Oxtail🇯🇲 . This is one of the best stews in the game, such a complex, rich and mouthwatering dish. Oxtail is simmered for 3 hours + until it completely falls off the bone. I’ve attached the full recipe below. 750g oxtail bone in and trimmed off excess fat & rinsed 2 tbsp green seasoning 1 tbsp all purpose seasoning 1/2 tsp ground ginger 1 tsp smoked paprika 1/2 tsp cayenne pepper 3 tbsp liquid pimento or 1 tbsp ground pimento 1 tsp browning (optional for colour) Salt & black pepper to taste 2 tsp avocado oil 1 tsp caster sugar 1 brown onion finely diced 1 tomato diced 4 garlic cloves finely diced 2 spring onions finely diced 10 sprigs of fresh thyme 3 bay leaves 1 scotch bonnet 1 litre beef stock/water 3 tbsp ketchup 2 tbsp liquid pimento or 8 pimento berries 1 cup cooked butter beans Start by placing your clean oxtails in a large bowl, then add all the marinade ingredients into the bowl and mix well until fully combined. Place in the fridge overnight for best results or a couple of hours. Heat up a large stew pot on a medium high heat, then add the oil/fat, followed by the sugar and allow to caramelise & turn a dark brown colour but not burnt. Then add the oxtail pieces and sear for a few minutes on each side, then remove. Now add the onions, tomato, garlic, thyme & bay leaves, then saute for a few minutes. Add the oxtails back to the pot, alongside the stock, ketchup and pimento. Bring to a simmer, then cover and cook for 2 & 1/2 hours. Remove the lid, thyme & bay leaves, then add the butter beans and simmered uncovered for a further 30-40 minutes. You can remove the excess fat that has risen to the top and also add some flour if you want to thicken it up. #oxtail #stew #jamaicanfood #caribbeanfood #comfortfood
