Ford literally talks about his theory of Weirdness Magnetism multiple times. He even has to thoughts that it was either the UFO causing it or Gravity Falls naturally has this field of energy that brought the UFO. And as you said, Stan getting his memory back is explained in other episodes but I do think that because it was so recent and it was his first time having his memory erased slightly explains how he got his memories back so quickly lore wise. But it was obviously because they wanted to end on a feel good note.
