Do you like Indian food? They have a good amount of vegan dishes. I’m Mauritian and our foods are a mix of multiple cultures with heavy Indian influences. I just made something called gateau piment. It’s somewhat comparable to a falafel. You use split peas as your base, blend, put in green chillies (or just cayenne pepper if you don’t like too much spice), onion, fennel seeds, salt, cumin and chopped coriander. Make them into balls and fry them. Then there’s vegan curries, vegetable samosas, onion bahji, etc etc. or things made from a root that has what feels like a million different names “cassava”/ “maniok”. There’s one kind you’d use for fufu and there’s a “sweet” kind that you can peel and cook like a potato, put some margarine or something on it. You can also make sweet treats from it, it’s quite versatile and tasty
