@ashleylamego: Peperonata Calabrese ✨ 2 red/yellow peppers (sliced) 1 medium yellow onion (sliced) 4-5 mushrooms (sliced) 2 cloves of garlic 3 tbsp of tomato passata Salt and pepper for seasoning 1/2 cup of olive oil In a large pan heat olive oil on medium/high heat. Add peppers and ensure they are placed in an even layer in the pan. Do not touch for about 5 minutes and allow a crispy crust to form on the peppers. Stir in onions, mushrooms and garlic and mix to combine. Season with salt and pepper and add Passata. Lower heat to medium-low and allow veggies to cook down until very soft -about 15-20 minutes. Please Note: at this point if you find the dish to look dry add a few more tablespoons of olive oil. Serve with bread. Enjoy 😊 FYP, Italian, calabrese, recipe

Mine are from Armo e Gallina. I do this too but sometimes I have this for breakfast. I make this and then make a big bird nest in the pan with the peppers and onions and put a few eggs in the middle and do them sunny side up. Good for dipping the bread in.
