So the meaning of Armand's marvellous insult is that Hamlet is the titular character of Shakespeare's play Hamlet who wants to overthrow his lying uncle from the throne, and Polonius is said uncle's advisor. So basically what Armand is saying is "don't get ahead of yourself, you are not the young hero up against a tyrant, nor are you the wise older villain's assistant (because being the main villain isn't even in the cards for you). You will never be anything more than a supporting role, a background character." Combined with the mocking use of the British colloquialism "thesp", hinting at Santiago's own mediocre career on the west end. It's such a well crafted insult and of course Santiago would understand it because he's a self-proclaimed professional.
