Dandelion honey!🍯 This is the first year I’ve made it and am so excited by how similar it tastes. I also think this is a great handmade gift idea that’s budget friendly. So simple to make, I’m going to make a hot version too by adding a few chillies. Let me know any ‘honey’ bakes you’d love recipes for! #vegan #honey #hothoney #dandelionhoney #Recipe You will need: 80-100g yellow dandelion petals (I had 80 for this) 350ml water (plus more, see method) Half lemon 350g sugar Method - Rinse the dandelions to remove any dirt - add the dandelion petals and half a lemon to a pan with 350ml water. Bring to a boil then simmer for 15mins. Take off the heat and leave to infuse over night (minimum 6hours) - Strain the water into a jug, making sure to squeeze the petals to get all of the water out. Add more water as needed to get the liquid back to 350ml (I added around 100ml water) - Pour this back into the pan with 350g sugar. Place over a medium heat and stir until the sugar has dissolved. Bring to a boil and gently boil for around 15mins until it looks slightly darker and has thickened. It will still be very runny as it sets as it cools, you don’t want to boil as it will become too firm. Enjoy!!
