Hi, love your work! I was just wondering: on your YouTube demo you seem to have used the double pan method from the beginning but you also say to bake the first 8 minutes and then add the second pan? What’s best?

have you ever reviewed claire saffitz cookbooks “dessert person” or “what’s for dessert”? one thing i definitely appreciate about them is the ingredients are all in oz/grams instead of cups! i’d love to hear your thoughts on it!
