I cure my own meats and the problem with using celery root powder as a substitute is that you run the risk of putting not enough or too much nitrates and nitrites into your meat whereas the pure version is much easier to get the exact amount required.

I use to be a manager for a prepfood department at wholefoods and had to explain nitrites/nitrates to folks who wanted to order deli meat. I had people get big mad over it because they didn't understand that it naturally occurs in meat and we just were not adding more as a preservative.

The issue is the concentrated celery which is just a long way around to getting back to the original. Cured meat is simply not good for your bowels.

The most frustrating thing is celery powder triggers celery allergies, but non-celery derived nitrates don’t, so people with celery allergies have to be extra careful now.
