Your phone camera is always trying to figure out what color the light in the room is. When it sees only the cloth, it may guess wrong, so the cloth looks slightly off. When you place a white sheet of paper beside it, the camera recognizes: "That should be white." It then recalculates the colors in the scene and corrects them automatically.

It’s called white balance. Phones are usually set to auto white balance, constantly guessing what white is. However, when a white paper is placed the phone recognises it as white and accurately renders the colours.
