seitan is low in lysine so if you wanted to make it a complete protein add some chickpea flour if you don't get a lot of it elsewhere (for anyone new to seitan)

maybe I'm just picky, but I highly prefer Anthony's vital wheat gluten. it doesnt have the weird flavor i get from bobs red mill (which I usually love)
