@cookcleanandrepeat: Queso Chicken & Rice Bake Ingredients: * 2 packs Knorr Mexican Rice * 1 packet taco seasoning * 1 (16 oz) jar salsa * 3 cups chicken broth * 2–3 cups cooked shredded chicken * 2 cups shredded Mexican blend cheese * 1 (16 oz) jar queso Directions: 1. Preheat oven to 350°F. 2. In a 9x13 baking dish, add the Mexican rice, taco seasoning, salsa, chicken broth, and cooked chicken. Stir everything together well. 3. Sprinkle the shredded Mexican blend cheese evenly over the top. 4. Cover tightly with foil and bake for 45–50 minutes, or until the rice is soft and has soaked up most of the liquid. 5. Remove from the oven and spread the jar of queso over the top. 6. Let sit for a few minutes before serving. Notes: We loved this just as it was, but it was also great served with tortilla chips! Feel free to add your favorite taco toppings like sour cream, jalapeños, diced tomatoes, or green onions.
