all bread goes in the fridge come summer time cause it molds faster and I'm fine tossing in microwave for 15 secs to soften it before I make my sammie.

We always keep ours in the fridge and it's just fine. We don't have problems with it. It's just the way that we operate. Living in the South, with all of the things in terms of humidity and everything else, this is just the best method for us.

I’ve always store my bread in the fridge and never noticed it going stale until WEEKS after it would have gotten moldy at room temp. A quick warm up in the toaster and can use for anything.

Reheating the refrigerated or frozen bread — as in toasting it — also turns the carbs into resistant starch, does it not? And resistance starch spikes the blood sugar less than straight-up carbs do, yes?
