Perfect for a Thanksgiving starter imo! Hosting tip: it is all easy to make ahead. The lavender rosemary salt is super easy to make a few days in advance. The honey is too, just keep it in the fridge. Because you do want the brie butter to have a soft & fluffy texture, you can brown and whip the butter 2-3 days ahead. Let it get to room temp and then whip with the brie. Assemble right before serving. Ingredients: * 8 oz brie (rind removed). * 4 oz unsalted butter. * 2 tbsp heavy cream. * 3 tbsp honey. * 1/3 cup creamed honey. * 1/4 tsp lavender flowers. * 1 tbsp fresh rosemary. * 1 thyme sprig. * Pinch of salt. * Herbs de provence to taste (optional) Lavender Rosemary Salt: * 1/4 cup flaky salt. * 1.5 tbsp fresh rosemary (chopped). * 1 tsp dried lavender flowers. Directions: 1. Brown the butter until deeply golden. 2. Add to a bowl and whip over an ice bath to get it fluffy and all incorporated. 3. Remove from ice bath. Add in the brie & whipped cream, whip together using a hand mixer for 1-3 min until fully incorporated and smooth and fluffy. 4. Add in the 3 tbsp of honey to a saucepan with the lavender, pinch of salt, thyme and rosemary. Bring to a light simmer, turn heat off and let it steep for 15 min or until it fully cools. Remove thyme and combine with the creamed honey. I like refrigerating it for it to get harder. 5. Mix the flaky salt with the rosemary and lavender. Make sure you "desintegrate" the lavender with your fingers so you don't get a big chunk. 6. Pipe the brie butter & honey, alternating. Top with the flaky salt (obviously not all of it) and a bit of herbs de provence. #whippedbutter #brie #whippedcheese #briecheese #makeitdelicious
