Healthy Carrot Cake Muffins Gluten-free · Refined sugar-free · Makes 6 muffins Ingredients 60 ml (1⁄4 cup) olive oil 70 g (1⁄3 cup) coconut sugar 45 ml (3 tablespoons) maple syrup 2 large eggs, at room temperature 115 g (1⁄2 cup) plain Greek yogurt or Skyr 7 ml (11⁄2 teaspoons) vanilla extract or 1 teaspoon vanilla bean paste 90 g (about 3⁄4 cup) finely shredded carrots (lightly squeezed, but still with a bit of moisture) 90 g (3⁄4 cup) gluten-free all-purpose flour 50 g (1⁄2 cup) fine almond flour 11⁄2 teaspoons baking powder 1⁄4 teaspoon baking soda 1⁄4 teaspoon fine sea salt 1⁄2 teaspoon ground cinnamon 1⁄4 teaspoon ground nutmeg (or omit if preferred) 2 tbs (14 g) ground flax seeds 3 Medjool dates, finely chopped (about 45 g) Instructions Preheat the oven to 350°F (175°C). Line a muffin tin with 6 paper or silicone liners. In a large bowl, whisk together the olive oil, coconut sugar, and maple syrup until smooth and well combined. Add the eggs one at a time, whisking well between each until the mixture lightens slightly. Stir in the yogurt, vanilla, and shredded carrots. Mix until fully incorporated. Add the gluten-free flour, almond flour, baking powder, baking soda, salt, cinnamon, nutmeg and chopped dates. Fold gently just until no streaks of flour remain—avoid overmixing. Divide the batter evenly between the muffin cups, filling them almost to the top. Sprinkle with coconut sugar or maple flakes if using. Bake for 20 to 22 minutes, or until the tops are golden and spring back when gently pressed. Let cool for at least 20 minutes before enjoying. Optional Frosting Creamy Maple Cream Cheese Frosting • 100 g (3.5 oz) cream cheese, softened • 80 g (1⁄4 cup) plain Greek yogurt or Skyr • 3 tablespoons maple syrup • 1⁄2 teaspoon vanilla extract Whip together until smooth and creamy. Dollop generously onto cooled muffins. Frosting should be added once the muffins are fully cooled. Store frosted muffins in the fridge. #wieiad #Foodie #eeeeeats #healthyfood #healthylifestyle #healthyeating #breakfast #protein #guthealth #hormonehealth #healthyrecipes #healthysnack #refinedsugarfree
