EPISODE 1: MINI PIZZA CROISSANTS 🍕🥐 Welcome to The Lunchbox Line Up - my series of easy, freezer-friendly recipes to make school lunches that little bit easier (and a lot less boring!) 🙌🏼 First up are these Mini Pizza Croissants. They’re SO easy to make, perfect for batch cooking and can be frozen once cooled, ready to grab out whenever you need something for the lunchboxes 👌🏼 Ingredients: 2 sheets ready-rolled puff pastry (I always use @Jus-Rol ) Pizza sauce (or leftover @Mutti Pomodoro UK pasta sauce for us today) Grated mozzarella Ham 1 egg Method: 1. Preheat the oven to 180°C fan. 2. Lay out one sheet of puff pastry and spread over a thin layer of pizza sauce, leaving a small border around the edge. 3. Add the ham if using and scatter over your cheese, then place the second sheet of puff pastry on top and gently press down. Use a fork around the edges to seal. 4. Cut the pastry into triangles, then roll each one from the wider end towards the point to create your mini croissant shape. 5. Place onto a lined baking tray and brush with beaten egg. 6. Bake for around 18–20 minutes, or until puffed and golden. 7. Once cooled, pop into lunchboxes or freeze for another day. ❄️ FREEZER TIP: Once completely cooled, freeze in an airtight container or freezer bag.
