It only happens with strong acids so something like glacial acetic acid wouldn't really warm up at all, also strong, concentrated acids like HCl generate some heat but not as extreme as sulphuric acid. So it's just really important to be careful with mixing strong acids, bases and anhydrous but very hydroscopic salts with water

I was always told it had to do with splashing. If your mixture splashes, you’d rather it be most water than mostly acid.

As a lab tech, I always explain to the new ppl why we have dos and don'ts. And when possible, give personal examples (see this lil hole in my lab coat? Yeah that's from this diluted acid so now you know to be careful and wear PPE). That's how we have the best chance they they'll actually listen and remember the rules/tips/advice. Same with explaining how/why protocols work. We can't just follow stuff without knowing why and call ourselves scientists!

the one exception I've always been told is when you are adding to a narrow necked vessel such as a volumetric flask, you do it the opposite way so that if there's steam generated, the water is forced back out instead of the acid.
