Temper into 4 egg yolks, cook to 170-175°F, then stir in 1½ tsp vanilla bean paste, 1 tsp vanilla, ½ tsp almond extract, and 1-2 drops butter extract (optional). Chill overnight. For the mousse, beat ¼ cup cream cheese, ⅓ cup marshmallow fluff, 1 tsp vanilla, tiny drop almond extract, and a pinch of salt. Mix in 3 oz melted white chocolate, then fold in ¾ cup whipped cream. Chill overnight. Day 2: Churn ice cream about 25 minutes. Fold in 4-6 chopped frosted sugar cookies.
