@sarahsweets017: I made the strawberry shortcake version of the viral upside-down cheesecake and WOW 😍🍓🤍 Strawberry Crunch Crust: • 48 Golden Oreos • 1½ oz freeze-dried strawberries • ¾ cup melted butter Strawberry Filling: • 3 cups frozen strawberries • ⅔ cup sugar • Juice of ½ large lemon • 1 tsp lemon zest • 2 tbsp cornstarch • 2 tbsp water Cheesecake Filling: • 24 oz cream cheese • 8 oz mascarpone • ½ cup sour cream • 1½ cups powdered sugar • 1½ cups heavy cream • ½ cup powdered sugar • 1 tsp vanilla • Squeeze of lemon juice Directions: 1. Cook strawberries, sugar, lemon juice, and zest until juicy. Add cornstarch slurry and cook until thick. Cool completely. 2. Crush Oreos and freeze-dried strawberries. Mix with butter and press into a greased, parchment-lined springform pan. Freeze while making filling. 3. Beat cream cheese until fluffy. Mix in mascarpone, sour cream, powdered sugar, vanilla, and lemon juice. 4. Whip heavy cream with remaining powdered sugar and fold into cheesecake mixture. 5. Add ⅔ filling to crust, make a well, add strawberry filling, then cover with remaining cheesecake filling. 6. Chill overnight, flip, remove parchment, and dig in!
