Shahs chicken & rice 🌶️ - I feel like I’m doing a disservice to this because I already know this is better🤓 Also… I just want to get one thing off my chest: rice people >> pasta people😛 Ingredients Basmati Rice (2 cups): 1 onion (finely chopped) 2 tbsp tomato paste Salt & pepper Chicken thighs (1.5kg): Olive oil (eyeball it bro) 3 tbsp balsamic vinegar 2 tbsp tomato paste Juice of 1 lemon 2 tsp thyme 1 tsp rosemary 2 tsp onion powder 2–3 garlic cloves (finely grated) 2.5 tsp paprika Salt Green Sauce: 3 avocados 3 bullet chillies Handful coriander Juice of 2-3 lemons 1 onion 3–4 garlic cloves Salt Method: 1️⃣ Add all the seasonings to the chicken and marinate for as long as possible. The longer the better. 2️⃣ Wash the rice until the water runs clear, then soak for 1–2 hours. 3️⃣ Add the chicken to a pan skin side down and get some colour on it before flipping. (Or air fry it… icl this is even better) 4️⃣ Once cooked, remove the chicken and DO NOT throw away all that flavour. Add diced onion to the same pan and sauté for a few mins, then add tomato paste and cook it out for 1–2 mins. 5️⃣ Add water or stock (always double the amount of rice) and season with salt & pepper. Add the rice and boil on medium-high heat until the water level drops and you can see the rice. 6️⃣ Lid on, low heat for 15 mins and let it do its thing😌 7️⃣ Blend all the green sauce ingredients till smooth. Genuinely one of the best sauces I’ve made. Creamy, fresh, spicy and tangy🥵 8️⃣ Plate it all up and there you have it shahs but BETTER!! #fyp #chickenandrice
