@domesticblisters: I served this for dinner. Fruit filling: 4-6 cups frozen fruit, 1/3 c sugar, 1 Tbsp corn starch, 1Tbsp lemon juice, sprinkle of salt. Crumble: 1/2 c oats, 6 Tbsp flour, 3 Tbsp each of white & brown sugar, 4 Tbsp soft butter.

My hack for lemons is to keep a few in the freezer, I still use bottles juice but I can microplane some zest in there from the still frozen lemon, to add to the lemony-ness, and toss the lemon back in the freezer for next time!

You can buy lemon powder which you reconstitute and it tastes as good as fresh lemons while not rotting in the fridge. It also comes in raspberry and lime that I’ve seen. It really is good and works in drinks etc., too!

If you’ve got a stick blender, it makes the whipped cream very quickly, with easier cleanup. And using a whisk or a potato masher for the crumble topping you don’t have to touch it. A pastry cutter is ideal, but those are kind of specific.

If anyone has a bullet type blender take a cup of heavy whipping cream with two tablespoons of chocolate syrup and blend for only like a minute. It’s the easiest and best chocolate mousse.
